Kid Friendly – Chip Salad

Last school holidays we visited our beautiful friends that live in Airlie Beach.  We were invited over for dinner and I heard all about my friend Stacey’s famous ‘chip salad’ her kids LOVE it and her hubby raved how delicious it was. Stacey laughed and said Kat, it’s the most basic salad of all, but the funny thing is that her kids won’t eat it unless the special ingredient is added.  Kids can be so fussy and just the simplest of things will help them learn to eat new food. Needless to say my kids eat the whole lot.

Introducing you to chip salad…. you can use whatever salad items you have in the fridge.

Chip Salad

Ingredients
  

  • 1 bottle Paul Newmans Ranch Dressing
  • Lettuce
  • Carrot grated
  • Cheese grated
  • Cucumber diced
  • Capsicum diced
  • Tomato chopped
  • 1/2 packet Corn chips crushed

Method
 

  1. Put all ingredients into bowl, stir and serve immediately so chips don't go soggy.

Notes

depending on the size of your salad you could add more chips, 1/2 packet is enough for a family, full packet if serving large salad at a BBQ

Hehe I love how clever this is! It’s a bit like putting sprinkles on top of things… makes kids go absolutely crazy for it!

Yum, it looks very tasty, I might have to try it out on my kids. I mostly just make salad as a bowl of chopped salad vegies (ie cucumber, tomatoes, carrot sticks etc) that they can select from, because my younger two a) don’t like lettuce (what the?) and b) prefer all their foods separate, not touching, esp my middle child.

Whereas of course kid#1 likes salad dressing and prefers not to taste individual foods, especially vegetables! And, he loves corn chips. He, I can be sure, will like this. It will be interesting to see if the corn chips entice the others to try it too 🙂
