Honey Biscuits are a very quick and easy biscuit to make, you should already have all these items in your fridge or pantry.
Honey Biscuits are freezable so you can put them in the kids lunchboxes as well. Lunchbox below is available from here.
I freeze all the biscuits I make. You can more about how I freeze biscuits and cookies here. I place them frozen in the kids lunchboxes and they are defrosted by morning tea time.

Ingredients

- 60g butter
- 1 tablespoon honey
- 1 egg yolk
- 1 tablespoon milk
- 1½ cups self raising flour
- 3/4 cup sugar
- ½ cup desiccated coconut
Instructions
- Preheat oven to 180C.
- Melt butter and honey in microwave for 30 seconds, mix well and set aside.
- Add flour, sugar and coconut into bowl.
- Mix egg yolk and milk into slightly cooled butter mixture.
- Pour over butter mixture and mix well to combine.
- Roll out spoonfuls of mixture onto greased baking pans.
- Press with fork to flatten.
- Bake in moderate oven for 10-12 minutes.
- Remove from oven, after 5 minutes cool on baking racks.

Are the qualities right in the recipe, or is it missing milk?

I ended up adding milk, but added too much and got a sticky mess but got some biscuits in the end. So maybe 3tbs?

Definitely something missing. I added extra butter and a bit more honey. Turned out nice and short. Very yummy. Would love to try them with the correct quantities though.

I have just made them to. Absolutely moreish. I agree with the others. ended with a bowl of crumbs but I just added more milk until it seemed the right consistency.
that’s so great to hear. I think there could be a few factors, how soft the butter is, how big the egg yolk is, but what you did adding a little extra milk is perfect 🙂
Comes back to the Egg Yolk and it’s size… I had 800g eggs (large) and they worked out perfectly! If your eggs are small I would use two yolks! Yum… will be adding lemon rind next time and only half a cup of sugar! So easy and so yum!
I added the egg white and another spoon of milk and got a good mix. I found the biscuits eye watering sweet though, and couldn’t taste the honey over the coconut, so Im guessing the mix was so dry because of too much coconut and sugar, Rather than not enough wet ingredients.
Jacqueline I would recommend cutting back the amount of sugar if you’re finding them too sweet and dry. I hope this helps 🙂 Kat x
