My hubby made a double batch of these delicious homemade sausage rolls, a double batched was enough to serve 5 for dinner with salad, then enough left over for the kids school lunch boxes the next day. They are happy to have them cold, or here are some hot lunch box ideas.

Ingredients
- 250g sausage mince
- 250g beef mince
- 1 onion, finely diced
- 1 carrot, shredded
- 1/2 cup breadcrumbs
- 1 tablespoon tomato paste
- 1 tablespoon BBQ sauce
- 2 eggs
- 3 sheets puff pastry, thawed
- sesame seeds, optional
Instructions
- Preheat oven to 180C
- Cut each pastry sheet in half
- Combine sausage mince, beef, onion, carrot, breadcrumbs, paste, sauce and 1 egg into a bowl
- Use hands to combine all ingredients together
- Divide mixture into six
- Roll each portion into a long sausage and place onto each onto a pastry half
- Fold pastry sheet tightly over to seal
- Cut each long roll into 3
- Beat remaining egg in a small bowl, brush egg over pastry
- Sprinkle with sesame seeds if desired
- Bake in oven for 20-25 minutes
