This is a very quick and easy meal to prepare, make as per the recipe or simply search through your fridge to see what vegetables you have on hand, really any vegetable can be added to this dish.
I only add a little dash of soy sauce to the rice mixture while in the frying pan, as each of us like a different mild/strong soy flavour, so we add a little more to our bowls if needed.
Homemade Fried Rice

Ingredients
- 1 tlb oil
- 6 rashers shortcut bacon
- 6 spring onions
- 1 capsicum, diced
- 1/2 cup peas
- 200g tin cocktail prawns
- 3 cups cooked rice
- 3 tlb soy sauce
Instructions
- Heat oil in pan, add bacon, stirring for 3 minutes
- Add spring onion, cook for further 4 minutes or until bacon is browned
- Add capsicum, peas and prawns stir for 3 minutes
- Add rice, heat through
- Pour in soy sauce, stir to combine
- Serve

I love making fried rice. I also lightly whisk a couple of eggs and pour into the pan while the bacon is browning. Then once the bacon is browned and the egg has cooked and firmed up just break it apart with tongs/spoon and mix through the bacon and onion.
