Healthy Choc Mint Fudge

Ingredients

  • 15 medjool dates, seeds removed
  • 2 cups desiccated coconut
  • 1/2 cup pepitas
  • 2 tablespoons cacao
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 6 drops peppermint oil (food grade)

Instructions

  1. Line a 20cm square cake tine with baking paper and set aside.
  2. In a large food processor place all of the ingredients except for the peppermint oil.
  3. Process for 60-80 seconds on high until thoroughly mixed and fudge like.
  4. Add the peppermint oil and process for a further 10 seconds.
  5. Use your fingers to push the mixture into the lined cake tin evenly. Refrigerate for a least 1 hour before cutting into squares.
  6. Store in the fridge in an airtight container for up to 1 week.
