Garlic Parmesan Zucchini and Tomato Bake

Ingredients

  • 2 large zucchini, sliced, then cut into quarters
  • 1 punnet cherry tomatoes, cut in halves
  • 5 garlic cloves, crushed
  • 1/4 cup Parmesan Cheese, shredded
  • 1 tsp dried basil or oregano
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/3 cup parsley or basil, finely chopped
  • Cooking oil spray

Instructions

  1. Preheat oven to 180C.
  2. Spray a casserole dish with cooking spray.
  3. Add all ingredients to dish, except fresh parsley/basil and stir to combine.
  4. Bake uncovered for 25-30 minutes or until vegetables are cooked to your liking.
  5. Remove from the oven, sprinkle with basil or parsley and serve.
