Method
- Preheat oven to 190oC or 170oC fan. Grease and line a 20cm square pan.
- Lightly whisk eggs in a large bowl. Add rice, cheese, zucchini, peas and spring onions. Mix to combine. Pour into prepared pan. smothing top with a spatula. Bake for 30-35 minutes or until set.
- Cut slices into pieces and pack in lunchbox with grape tomatoes and fruit.

Just a quick question – these look yummy but I have a funny feeling my boys (2 under fives and hubby) won’t eat it so wondered if I they were freezer friendly? Thanks.

Carly 1 cup of uncooked rice equals 3 cups of cooked rice 250g is one cup cooked rice cheers kim
Kat left an O out of smoothing in method for zucchini slice sounds great for summer chilled am making on weekend as my dogs like zucchini ends good for them.Vets say if one of the dogs is eating the others doodah(droppings)
feed zucchini and they will stop as they need something that is in zucchini

Hi Karin I actually haven’t frozen this myself to confirm, however going it has rice in it I probably wouldn’t as I find rice does tend to go a little hard and it maybe hard to eat.
