  • 250g fettuccine
  • 2 chorizos, sliced
  • 1 brown onion, diced
  • 3 garlic cloves, minced
  • 400g can diced tomatoes
  • 2 cups baby spinach
  • 1/2 cup thickened cream
  • Salt and pepper, to season
  • Parmesan cheese, grated, to serve


  1. Cook pasta following packet directions. Drain.
  2. Meanwhile, heat a large frying pan over medium-high heat.
  3. Add chorizo. Cook for 3-5 minutes or until they start to brown.
  4. Add onion to pan. Cook for 5 minutes or until browned.
  5. Stir in garlic, tomatoes, spinach and cream. Mix and bring to the boil.
  6. Season with salt and pepper.
  7. Reduce heat to low and simmer for 5 minutes.
  8. Serve over fettuccine with a sprinkle of grated parmesan cheese.
