Ingredients
  

  • 3 tomatoes deseeded and finely chopped
  • ¼ red onion finely chopped
  • 3 spring onions finely sliced
  • 1 lime juice only
  • dash apple cider vinegar
  • 2 tbsp olive oil
  • salt and pepper to taste
  • a small handful coriander chopped (optional)
  • a little jalapeño diced (optional)

Method
 

  1. Place the 3 tomatoes, ¼ red onion, and 3 spring onions into a medium bowl.
  2. Add the juice of 1 lime, dash apple cider vinegar, and 2 tbsp olive oil.
  3. Season with salt and pepper.
  4. Gently stir until everything is well combined.
  5. Taste and adjust if needed. Add a little more lime juice or salt if it feels flat.
  6. Cover and refrigerate until ready to serve, or serve straight away.
