ROAST PORK WITH CARAMELISED APPLES AND ONION

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 tablespoon sea salt
  • 2.5 kg pork leg roast
  • 2 onions, thickly sliced
  • 4 Jazz apples, thickly sliced
  • 1/4 cup maple syrup
  • 1 teaspoon thyme sprigs

Instructions

  1. Preheat oven to 210°C fan-forced.
  2. Pour oil over pork and sprinkle with salt. Don’t forget the sides and press into scored rind.
  3. Place in a roasting tin and cook for 45 mins.
  4. Reduce oven to 160°C and cook for 30 mins.
  5. Place onion around pork and top with apple slices.
  6. Pour maple syrup over the apple slices and return to the oven, cooking for 30 mins
  7. Check if pork is cooked through, you may need to cook longer.
  8. Remove from oven.
  9. Sprinkle thyme over the apple.
  10. Rest pork for 10 mins, before slicing.
  11. Serve with caramelised apple, onion, roast potatoes and vegetables.
  12. Drizzle over pan juices, if desired.
