Ingredients
- 1 cup long grain rice
- 450ml milk of choice
- 400ml coconut milk
- 1/2 cup sweetener of choice
- 1/2 cup shredded coconut
- 2 eggs
- 1 vanilla bean pod (cut into quarters)
- 1 tspn coconut oil
- 1/2 tspn ground cinnamon
- 1/4 tspn ground nutmeg
- Good pinch of salt
Instructions
- Add all the ingredients into the slow cooker and whisk well
- Cook on medium for 3 hours
- Prep Time: 10 mins
- Cook Time: 3 hours
Note: Time may vary depending on your slow cooker. Your pudding will be ready when the rice is cooked.
