Crispy Oven baked fish

This is an easy and light meal. The fish was cooked beautifully in the oven along with a nice and crisp crumb.

  • 1/4 cup finely grated parmesan cheese
  • 2 tlb flat-leaf parsley finely chopped
  • 1/3 cup plain flour
  • 1 egg lightly beaten
  • 4 white fish fillets
  • cooking spray

Method

  1. Preheat oven to 220C
  2. Line a large baking tray with baking paper
  3. Place breadcrumbs into a frying pan over medium heat
  4. Continually stir breadcrumbs until browned, approx 3 minutes
  5. Place breadcrumbs on a plate to cool
  6. Place flour onto plate
  7. Have egg ready in a bowl
  8. Season fish with salt and pepper
  9. Add parmesan and parsley to breadcrumb mix, mix together
  10. Coat one piece of fish in flour, shake off excess flour
  11. Then dip into egg mix
  12. Then dip into breadcrumbs and place on baking tray
  13. Repeat with remaining fish
  14. Lightly spray each fish fillet with oil
  15. Bake in oven for 15-20 minutes (depending on the thickness of your fish, thick than 1.5cm will take much longer) or until cooked through
  16. Serve with salad

Notes

I used flake fish fillets which took approximately 25 minutes to cook. I used 2 large fillets and 3 medium fillets to feed my family of 5 and following this recipe there was enough crumb to coat it. I also didn't have any parsley on hand, but would be lovely added to the crumb mix.
