Coffee and Walnut Muffins are a delicious afternoon treat to have… with your coffee!!

Method
- Preheat oven to 180C
- Line muffin tin with 10 muffin paper cases
- In a large bowl combine flour, sugar and cinnamon, stir
- Add coffee, oil and egg, mix together but do not over mix
- Divide mixture evenly into muffin cases
- In a small bowl add flour, sugar and cinnamon, stir
- Add in butter, use your fingertips to combine
- Stir through walnuts
- Sprinkle over the top of muffin mixture
- Bake in oven for 15-18 minutes or until browned and cooked through
- Leave in pan for 5 minutes, then place on rack to completely cool.

Love your site Kat especially the recipes and tips. I have a question for you and your readers. Any muffin I make seems to stick to the paper case so a lot is wasted when the paper case is peeled off. Any tips ?? Thx Sue
Hi Sue, Hmm good question! I would try spraying them with a little cooking spray, i hope it helps. Let me know how you go.:)
Maybe try 4″ squares of baking paper instead of corrugated muffin cases. This was the inexpensive alternative we used to use in cafe where I worked, just push into muffin holes with a glass, spice jar or the round end of rolling pin.

Not a huge fan on walnuts is there a substitute or could i just leave it out?
you could use whatever your favourite nut it Julie, Pecan’s would be nice!
