Do you have lots of left over Christmas meat that you want to use up? I have shared a few of my favourite recipes to use up left overs below, hope you enjoy!
Left over meat storage
We usually slice up all the meat so it’s easy to get to for future lunch and dinners. I store them in airtight containers in the fridge.
Roast Pumpkin, Spinach and Turkey Pasta Bake
This pasta bake is a delicious way to use up some left over Christmas turkey meat. A creamy and very flavoursome roast pumpkin, spinach and turkey pasta bake. This bake made enough for our family of 5 plus left overs for the next day. Serve with salad and you can easily stretch it out to feed 10.
This is a really easy and quick salad to prepare and a great way to use up left over Christmas Ham or Turkey along with some salad items you may have in your fridge.
Ham and Coleslaw Roll
One of my favourite lunches after Christmas is Ham on a fresh bread roll with coleslaw.
Left over Ham Pizza
This was the kids favourite, a delicious ham pizza topped with whatever we had left in the fridge. Usually I make our own pizza base, but I was in a hurry this day and I purchased some pre-made bases from the supermarket. Spread on some BBQ Sauce, 2 table spoons grated cheese, ham, capsicum, salami, onion and cheese, then topped with more grated cheese, baked in the oven until golden.
Use up the ham in the quiche and add some salad left over from Christmas day to the side and you have a lovely light meal.
