Chocolate Self Saucing Pudding

Chocolate self saucing pudding is magic in a bowl. With a crunchy top, soft cakey goodness inside sitting on top of chocolate sauce. 

Sprinkle with icing sugar and serve warm with a dollop of cream or icecream.

Ingredients

Scale
  • 60g butter
  • 1/2 cup milk
  • 1 tsp. vanilla essence
  • 3/4 cup caster sugar
  • 1 cup self-raising flour
  • 1 tabs cocoa
  • 3/4 cup brown sugar
  • 1 tabs cocoa (extra)
  • 2 cups boiling water

Instructions

  1. Combine butter and milk in large pan, stir over heat until butter is melted. Remove from heat, stir in essence and caster sugar, then sifted flour and cocoa.
  2. Spread mixture into greased ovenproof dish (6 cup capacity).
  3. Sift brown sugar and extra cocoa over mixture, gently pour over boiling water.
  4. Bake in moderate oven (180C) for about 40 mins.
