This is a childhood favourite of mine, Chocolate Coconut Slice. Easy to make, no need for an electric mixer and a nice occasional treat for the lunch boxes.

Ingredients
Scale
SLICE
- 150g butter, melted & cooled
- 1 cup firmly packed brown sugar
- 1 egg, lightly beaten
- 1 tsp vanilla extract
- 1/2 cup plain flour
- 1/3 cup SR Flour
- 1/4 cup cocoa powder
- 3/4 cup desiccated coconut
ICING
- 1 1/2 cups icing sugar
- 1/4 cup cocoa powder
- 20g butter, finely chopped
- 2 tlb boiling water
Instructions
SLICE
- Preheat oven to 160C (fan-forceed)
- Grease and line with baking paper a 20x30cm lamington pan
- Place butter, sugar, egg and vanilla in a bowl, stir until combined
- Sift flour and cocoa into bowl, add 1/2 cup coconut
- Stir till mixture has combined
- Spread mixture evenly into pan
- Bake for 25-30 minutes or until just firm
ICING
- Sift icing sugar and cocoa into bowl
- Add butter and boiling water, stir together
- Spread warm slice with icing
- Sprinkle remaining coconut over slice

This is a great recipe . I made it last week and it was a hit . Made a different version today from another site ( cause I couldn’t find this one ) and it is a bit disappointing . I’m printing this one out now for future reference.
I made this slice this morning and the smell was delicious it took me back to the school fete days! yummy.
if you change the SR flour to all plain flour it makes a more dense and fudge base. just saying its a different variation and very yummy. thanks for the recipe.

Hi. Where did I go wrong with the icing? It was extremely dry and almost impossible to spread, even with doubling the water.
After it gets dry and you’ve mixed in as much you can, add a tiny bit more water till it reaches the consistency you want
I make something almost identical that is my husband’s absolute favourite! He thinks it tastes better after ‘ageing’ for a day (his words not mine).
