Chocolate Coconut Custard

I must confess, I’m a little addicted to this chocolate coconut custard.  It’s super easy to make in the thermomix (links to regular recipe included below), a great dessert to make the family, which they all love.  Thankfully, this recipe only makes 5 serves so there is usually no left overs, which I say is a good thing as I am sure I would snack on it if there was left overs in the fridge.

Ingredients
  

  • 60 g dark chocolate
  • 15 g cornflour
  • 50 g raw sugar
  • 2 eggs
  • 150 g coconut cream
  • 350 g milk

Method
 

  1. Place chocolate, cornflour and sugar in bowl - 10 sec / speed 10
  2. Scrape sides of bowl
  3. Add eggs, coconut cream and milk - 7 min / 90 deg / speed 4
  4. Allow to cool slightly and serve

Was so excited to make this but I just cannot get it to thicken… It’s staying the consistency of hot chocolate ?
