Chocolate Afghan Biscuits

Ingredients

Scale
  • 200g butter, softened
  • 3/4 cup brown sugar
  • 1 cup plain flour
  • 1/4 cup cocoa
  • 2 weetbix, crushed
  • 2 cups corn flakes

Icing

  • 60g cream cheese, softened
  • 60g butter, softened
  • 2 tablespoons nutella
  • 1 cup icing sugar
  • chopped walnuts

Instructions

  1. Preheat oven to 160°C, fan forced.
  2. Line two baking trays with baking paper or use a silicone mat.
  3. With an electric mixer cream butter and sugar until smooth.
  4. Sift in flour and cocoa.
  5. Add weet-bix and cornflakes, slowly mix to combine.
  6. Roll rounded tablespoons of mixture into balls, flatten slightly.
  7. Bake in oven for 15 minutes or until browned.
  8. Rest on the pan for 5 minutes, turn onto a wire rack to cool completely.
  9. For icing, with an electric mixer, add cream cheese, butter and nutella into a clean bowl. Mix until light and fluffy.
  10. Slowly add in icing sugar, mix until all combined.
  11. Spread icing ontop of each biscuit and top with a sprinkle of walnuts.
