Chicken and Spinach Pasta Bake

A simple and tasty Chicken and Spinach Pasta Bake recipe that can be thrown together quickly – and eaten in even less time!

If you’re in need of a fast dinner idea for a busy weeknight, then look no further than this chicken pasta bake. It doesn’t take long to prepare and the kids will absolutely love it!

To create this dinner, simply start cooking the pasta, fry some onion and garlic in the frying pan, then shred a BBQ chicken.

Chicken-and-Cheese-Pasta-Bake

To be frugal you could poach your own chicken rather than purchasing a BBQ chook from the supermarket.  See my tips on poaching chicken here.

Freezing:

You can make this meal in advance and freeze it! That way you will have a quick and easy dinner on hand for nights when you aren’t well or don’t feel like cooking.

Chicken and Spinach Pasta Bake

Serves: 6

Prep Time

Ingredients
  • 2 cups spiral pasta
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 brown onion, finely chopped
  • 500g passata (tomato pasta sauce)
  • 1 BBQ chicken, shredded
  • 100g baby spinach leaves, roughly chopped
  • 2 cups tasty cheese, grated
  • Salt and pepper, to season

Instructions

  1. Preheat oven to 180°C, fan forced.
  2. Cook pasta following packet directions, drain and return to saucepan.
  3. In a large frying pan, heat oil over medium-high heat.
  4. Add garlic and onion and stir for 3 minutes or until tender.
  5. Add onion mixture, passata, chicken, spinach and 3/4 cup cheese to hot pasta. Stir to combine. Season with salt and pepper to taste.
  6. Spoon pasta mixture into a 12-cup (3L) ovenproof dish.
  7. Sprinkle with remaining cheese.
  8. Bake pasta bake in oven for 20-30 minutes or until golden. Serve.

Kat, The pasta bake looks amazing. I cooked a baked Carbonara dish tonight and my kids have a “thing” about not wanting to eat the crunchy bits on top.
How do you find yours kids go with that? I am thinking about putting a lid on next time in the oven to stop the crunchiness ..
what do you think?

My kids love the crunch, but to stop this you as you say put a lid on, or some alfoil however any cheesy tops won’t brown instead it will just melt.

Hi Danielle, Yes absolutely it will freeze fine and defrosts just like it has come out of the oven.

I have so enjoyed seeing all the efforts on Facebook and Instagram and the encouragement of others in the community as you've worked through your own Home Refresh! Making changes in the home isn't always easy but for 14 days, everyone has impressed me with their hard work and positive attitudes. Knowing that there were so many out there doing the same tasks with me every day motivated me too! I organise everything in my home, including the dirty laundry LOL.  One area that I have tidied recently is my candle collection which I keep in my TV cabinet. Before - candles were just pushed into the cupboard and I couldn't see what was up the back.

I don't want you to organise these clutter hot spots today. Instead, I want you to look at your clutter hotspots, review your clutter and see what you can throw into the bags. Be ruthless, be quick and focus on the end goal.
