Chicken Parmigiana with Avocado and vegetables


  • 2 Chicken Breast
  • 3/4 cup plain flour
  • 2 eggs
  • 3/4 cup panko breadcrumbs
  • 12 tlb oil
  • 1 small bottle Pasta Sauce
  • Fressure Foods Avocado spread
  • 3/4 cup mozzarella cheese


  1. Slice Chicken breasts in half to create 2 schnitzels
  2. Flatten each piece with meat mallet
  3. Place plain flour, eggs and breadcrumbs into individual bowls
  4. Dip each piece of chicken into, plain flour (shake), egg (allow excess to drip off), then crumbs (press crumbs on).
  5. Place oil in fry pan, heat
  6. Brown snitzels on each side for 3-4 minutes, until cooked through
  7. Spread over each snitzel a spoonful of pasta sauce and dollop of avocado spread
  8. Then sprinkle with cheese
  9. Grill for 2-3 minutes or until browned
  10. Serve with vegetables
