Chicken Chimichangas

Oven baked Mexican chicken parcels


  • 2 cups cook chicken, shredded
  • 250g cream cheese, softened
  • 230g mexican cheese, grated
  • 1 packet of taco seasoning
  • 1 red onion, chopped
  • 8 tortillas


  1. Mix together chicken, cream cheese, mexican cheese, taco seasoning and spring onions.
  2. In a large bowl, mix together chicken, cream cheese, shredded cheese, taco seasoning, and onion.
  3. Divide evenly into the middle of each tortilla.
  4. Fold in each end, then roll to close.
  5. Place seam side down in a lightly oiled baking dish.
  6. Bake at 180C for 15 minutes, then turn and bake for another 10-15 minutes or until lightly golden.
