I LOOOOVE cream cheese icing, particularly on top of carrot and banana cake. It’s my son’s favourite as well, I made him this carrot cake to celebrate his 13th birthday earlier this year. My spoilt boy received 2 cakes, this is the one I made him for his birthday party. This cream cheese icing recipe was handed down to me by my Nan and I have continued to use the same recipe since.
Cream Cheese Icing Recipe
I split the cake in half (cooked in two tins) and doubled the cream cheese icing recipe so I could layer the middle of the cake with more cream cheese icing, you can never have too much of this icing!
Cream Cheese Icing
- 300g icing sugar
- 125g cream cheese, cubed
- 50g butter, room temp
- Beat the icing sugar and butter together with an electric mixer until well combined.
- Add the cream cheese and beat slowly for 1 minute.
- Turn the mixer to medium-high, beating for a further 4 minutes or until icing is light and fluffy.
