Ingredients

- 1 overripe banana, peeled
- 1 cup milk
- 2 eggs
- 1/2 teaspoon vanilla
- 50g butter, melted
- 1 1/2 cups self raising flour, sifted
Instructions
- Place banana into an electric mixing bowl, with whisk attachment on medium-high mash banana until smooth
- Add in eggs, milk and vanilla, mix until well combined
- Pour melted butter into bowl along with the flour, stir until blended together, do not over mix.
- Heat frying pan on medium, add a teaspoon of butter to pan, swirl to melt
- Place large spoonfuls of batter onto pan (or use a squeeze and pour cup), cook until a you see holes forming on top and golden underneath, flip. Once both sides are golden and pancake is puffed remove from heat. Repeat to use up all batter
- Serve with maple syrup
