Banana & Nutella Muffins

Ingredients

  • 4 medium over-ripe bananas
  • 1/2 cup castor sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups self raising flour
  • 1/2 cup pecans, chopped
  • 12 teaspoons nutella

Instructions

  1. Preheat oven to 180°C, fan forced.
  2. Line a 12-hole muffin pan with muffin cases, or use a silicone muffin tray.
  3. Place bananas into an electric mixing bowl. Using the whisk attachment in your bowl, mix bananas on medium speed until mashed.
  4. Add sugars, mix through bananas.
  5. Add in egg, oil and vanilla, and slowly mix.
  6. Place flour and pecans into the mixture, and gently combine.
  7. Spoon mixture evenly into muffin cases.
  8. Place a teaspoon of Nutella on top of each muffin.
  9. Use a skewer or toothpick to swirl through the batter.
  10. Bake for 15 minutes or until golden.
  11. Allow to cool in muffin tin for 5 minutes then cool further on wire rack.
