- 180g butter, softened
- 130g brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 225g plain flour
- 1/2 teaspoon bicarb soda
- 1 teaspoon cinnamon
- 3 bananas, mashed
- 160g dark chocolate chips
- 180g rolled oats
Instructions
- Preheat oven to 160°C, fan forced.
- Line baking trays with baking paper or a silicone mat.
- Add butter and sugar to thermomix bowl – 15 sec / speed 10.
- Add eggs and vanilla – 10 sec / speed 4.
- Pinch the banana into the bowl (mashing it in your fingers) in pieces, add flour, bicarb, cinnamon – 20 sec / speed 4.
- Add choc chips and oats – 20 seconds / reverse / speed 3.
- Place spoonfuls (tablespoon size) mixture onto baking trays, allow room for cookies to spread.
- Bake in oven for 10-12 minutes or until golden.
- Rest on pan for 5 minutes, turn onto a wire rack to cool completely.
