- 180g butter, softened
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups plain flour
- 1/2 teaspoon bicarb soda
- 1 teaspoon cinnamon
- 3 bananas, mashed
- 1 cup dark chocolate chips
- 2 cups rolled oats
Instructions
- Preheat oven to 160°C, fan forced.
- Line baking trays with baking paper or a silicone mat.
- Beat butter and sugar in an electric mixer for 5 minutes until light and fluffy.
- Add eggs and vanilla, mix until combined.
- Sift the plain flour, bicarb and cinnamon into bowl.
- Add bananas, oats and choc chips, mix until combined.
- Place spoonfuls (tablespoon size) mixture onto baking trays, allow room for cookies to spread.
- Bake in oven for 10-12 minutes or until golden.
- Rest on pan for 5 minutes, turn onto a wire rack to cool completely.
