Banana Choc Chip Cookies

These homemade Banana Choc Chip Cookies are a lovely soft addition to the kids’ lunchboxes and make for a great way to use up some old bananas sitting in the fruit bowl.

Ingredients

Scale
  • 180g butter, softened
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups plain flour
  • 1/2 teaspoon bicarb soda
  • 1 teaspoon cinnamon
  • 3 bananas, mashed
  • 1 cup dark chocolate chips
  • 2 cups rolled oats

Instructions

  1. Preheat oven to 160°C, fan forced.
  2. Line baking trays with baking paper or a silicone mat.
  3. Beat butter and sugar in an electric mixer for 5 minutes until light and fluffy.
  4. Add eggs and vanilla, mix until combined.
  5. Sift the plain flour, bicarb and cinnamon into bowl.
  6. Add bananas, oats and choc chips, mix until combined.
  7. Place spoonfuls (tablespoon size) mixture onto baking trays, allow room for cookies to spread.
  8. Bake in oven for 10-12 minutes or until golden.
  9. Rest on pan for 5 minutes, turn onto a wire rack to cool completely.

Ingredients

  • 130g brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 225g plain flour
  • 1/2 teaspoon bicarb soda
  • 1 teaspoon cinnamon
  • 3 bananas, mashed
  • 160g dark chocolate chips
  • 180g rolled oats

Instructions

  1. Preheat oven to 160°C, fan forced.
  2. Line baking trays with baking paper or a silicone mat.
  3. Add butter and sugar to thermomix bowl – 15 sec / speed 10.
  4. Add eggs and vanilla – 10 sec / speed 4.
  5. Pinch the banana into the bowl (mashing it in your fingers) in pieces, add flour, bicarb, cinnamon – 20 sec / speed 4.
  6. Add choc chips and oats – 20 seconds / reverse / speed 3.
  7. Place spoonfuls (tablespoon size) mixture onto baking trays, allow room for cookies to spread.
  8. Bake in oven for 10-12 minutes or until golden.
  9. Rest on pan for 5 minutes, turn onto a wire rack to cool completely.
