Looking for a healthy snack that will help give you a boost of energy on a tired afternoon?  These coconut Bliss Balls are filled with natural sweetness for that natural energy boost you’re looking for!

Looking for a healthy snack that will help give you a boost of energy on a tired afternoon? These coconut Bliss Balls are filled with natural sweetness for that natural energy boost you're looking for!

Bliss balls can be rolled and coated in coconut, however, I put the full amount of coconut into the mixture as I find this quicker and less fuss.  However, if you like your bliss bliss balls rolled in coconut, then place 1/4 cup coconut into the food processor and roll the ball through the other half.

Coconut Bliss Balls

Serves:

Ingredients
  • 1/3 cup cashews
  • 10 medjool dates, pits removed
  • 1/2 cup shredded coconut
  • 1 tablespoon coconut oil
  • 1 tablespoon water

Instructions

  1. Place nuts into a food processor, blitz on high for 10 seconds.
  2. Add dates, coconut, oil and water, process on high speed for 20 seconds.
  3. Scrape down sides of bowl, process on full speed for 40-60 seconds or until mixture combines together.
  4. Roll into bite sized balls.
  5. Store in the fridge for up to 1 week.

As a child, my mother hated coconut to the extent it was banned from our home. Made her feel ill she said. So, I grew up without being able to taste delicious recipes like this one. I think I will try this one very soon
