Raw Chocolate Coffee Bites

Ingredients

  • 3/4 cup walnuts
  • 1/2 cup almonds
  • 1 1/4 cup Medjool dates, seed removed
  • 1/2 cup cacoa or cocoa
  • 1 tablespoon instant coffee
  • 1 teaspoon vanilla extract
  • pinch salt

Instructions

  1. Grease and line a loaf pan with baking paper
  2. Place nuts, cacoa and coffee into food processor, process until they are fine crumbs
  3. Place dates into food processor, process until completely chopped
  4. Add vanilla and salt and process until combined
  5. Pour mixture into loaf pan and firmly press into pan
  6. Refrigerate for 30-60 minutes, then slice into bite size pieces
  7. Store in an airtight container in the fridge
