Raw Chocolate Coffee Bites

I have been watching the food I have been snacking on, I am making sure I have something reasonably healthy in my fridge to satisfy my 4pm sweet craving. I am so excited to share with you this Raw Chocolate & Coffee Bite recipe below, ooh wow, it is so delicious with a good hint of coffee, one small bite is all I need to get me through to dinner time.

Raw Chocolate Coffee Bites

Ingredients

Scale
  • 3/4 cup walnuts
  • 1/2 cup almonds
  • 1 1/4 cup Medjool dates, seed removed
  • 1/2 cup cacoa or cocoa
  • 1 tablespoon instant coffee
  • 1 teaspoon vanilla extract
  • pinch salt

Instructions

  1. Grease and line a loaf pan with baking paper
  2. Place nuts, cacoa and coffee into food processor, process until they are fine crumbs
  3. Place dates into food processor, process until completely chopped
  4. Add vanilla and salt and process until combined
  5. Pour mixture into loaf pan and firmly press into pan
  6. Refrigerate for 30-60 minutes, then slice into bite size pieces
  7. Store in an airtight container in the fridge

You can make these bites into balls, but when I origianlly made these I was in a hurry and just pressed the mixture into a loaf pan, left in fridge for 30 minutes and sliced up into bite sized pieces within seconds. But if you have time you could roll into balls too!

Ingredients

Scale
  • 80g walnuts
  • 80g almonds
  • 1 tablespoon instant coffee
  • 220g Medjool dates, seed removed
  • 40g cacoa
  • 1 tsp vanilla extract
  • pinch salt

Instructions

  1. Place nuts and coffee into Thermomix, blend speed 7 / 5 seconds
  2. Add dates, cocoa and salt, blend speed 8 / 10 seconds
  3. Scrape down sides add vanilla, stir speed 8 / 8 seconds
  4. Pour into a lined loaf pan and press down firmly on mixture
  5. Sit in fridge for 30 min – 1 hour and then slice into bite size pieces
