Ingredients
  

MUFFIN
  • 2 cups SR Flour sifted
  • 1/4 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 cup saltanas
  • 1 cup mashed pumpkin
TOPPING
  • 3 tlb SR Flour
  • 3 tlb brown sugar
  • 3/4 tsp cinnamon
  • 2 tlb cold butter grated

Method
 

  1. Preheat oven to 180C
  2. Combine SR Flour, salt, cinnamon, nutmeg, cinnamon, bicarb and sugar in a bowl.
  3. Create a well.
  4. Add, egg, milk, oil, saltanas and pumpkin.
  5. Stir
  6. Spoon evenly into muffin tin
  7. Combine topping ingredients in a small bowl.
  8. Using fingers pinch all ingredients together, should resemble fine bread crumbs.
  9. Sprinkle over muffins
  10. Cook in oven for 20-25 minutes
