Ooh no…holiday’s are officially over 🙁 Hubby returned back to work yesterday so now I have to take myself out of holiday mode and catch up on housework, washing, ironing, baking and loads more. I’ve been unwell since returning from holiday’s which finds me behind in everything, so I hope you don’t mind I am taking a day of posting to try and get back on top of it all. However here’s some snap shots of some items I was able to bake yesterday and a picture of my girls making chocolate cupcakes…they love to bake too.

I had a big baking day on sunday was great. A tip for your girls. Use an old fashioned ice cream scoop (the ones where you squeeze the handle together to remove the ball) to measure out cupckae and muffin batter. Makes less mess and you get a perfect portion every time.
You can use the small ones (if you ca find them) to measure out cookie dough too.
that's a great idea Becci, I don't have one of those scoops but will keep my eye out.
The weekend must have been the time for baking. I made my mother's homemade chocolate and coconut slice for morning tea for a friend who was moving and it disappeared in seconds!!! Great tip Becci for the cupcakes. I also learnt recently to put the mixture into a piping bag (or ziplock with corner cut off) and pipe into the cases. Again less mess, more even portions and it also eliminates any air pockets. Love your site Kat. You inspire and motivate us all 🙂

Christmas is a great time for baking too, I love the time we spend together and baking is one of those happy times. I'm glad you enjoy it too with your girls.
