- 2 very ripe bananas, mashed
- 2/3 cup caster sugar
- 3/4 cup Greek yoghurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups plain flour
- 2 teaspoons baking powder
- 1 teaspoon salt
Instructions
- Preheat oven to 180°C, fan forced.
- Grease or line a loaf tin and set aside.
- In a large bowl whisk together the banana, sugar, yogurt, eggs and vanilla, until smooth and creamy.
- Sift in the flour, baking powder and salt and gently fold in until just combined. Don’t overmix.
- Pour the batter into the prepared pan.
- Bake loaf in oven for 40-45 minutes or until golden and cooked through.
- Rest in tray for 5 minutes, before transferring to a wire rack to cool completely or serve warm.
