- 1 1/4 cup rolled oats
- 1 cup desiccated coconut
- 1 cup peanut butter
- 1/2 cup maple syrup
Instructions
- Add oats and coconut to a bowl.
- In a microwave-safe jug add peanut butter and maple syrup, stir to combine.
- Heat in microwave for 20 seconds, stir. Continue cooking in 20 second increments until mixture is smooth and thickened, stirring in-between.
- Pour peanut butter mixture over oats. Stir and fold until thoroughly combined.
- Roll the mixture into small bite-sized balls. Place on a board or pan.
- Refrigerate for 1 hour.
- Once firm, store in a airtight container, in the fridge for up to 1 week.
