Peanut Butter Coconut Balls

Ingredients

  • 1 1/4 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup peanut butter
  • 1/2 cup maple syrup

Instructions

  1. Add oats and coconut to a bowl.
  2. In a microwave-safe jug add peanut butter and maple syrup, stir to combine.
  3. Heat in microwave for 20 seconds, stir. Continue cooking in 20 second increments until mixture is smooth and thickened, stirring in-between.
  4. Pour peanut butter mixture over oats. Stir and fold until thoroughly combined.
  5. Roll the mixture into small bite-sized balls. Place on a board or pan.
  6. Refrigerate for 1 hour.
  7. Once firm, store in a airtight container, in the fridge for up to 1 week.
