Looking for a healthy snack that will help give you a boost of energy on a tired afternoon? These coconut Bliss Balls are filled with natural sweetness for that natural energy boost you’re looking for!

Bliss balls can be rolled and coated in coconut, however, I put the full amount of coconut into the mixture as I find this quicker and less fuss. However, if you like your bliss balls rolled in coconut, then place 1/4 cup coconut into the food processor and roll the ball through the other half.

Ingredients
Method
- Place nuts into a food processor, blitz on high for 10 seconds.
- Add dates, coconut, oil and water, process on high speed for 20 seconds.
- Scrape down sides of bowl, process on full speed for 40-60 seconds or until mixture combines together.
- Roll into bite sized balls.
- Store in the fridge for up to 1 week.

As a child, my mother hated coconut to the extent it was banned from our home. Made her feel ill she said. So, I grew up without being able to taste delicious recipes like this one. I think I will try this one very soon
