Baked Fish Fingers

A fantastic recipe to get the kids to eat fish, they will love the crunch of the Panko crumbs.  Plus this is an easy weeknight meal.  I used Hoki fish, however you can use whatever white fish fillet is on special when purchasing.

Ingredients
  

  • 700 g white fish fillet
  • 2 eggs
  • 1/2 cup plain flour
  • 2 cups panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method
 

  1. Preaheat oven to 180C
  2. Line baking tray with baking paper
  3. Place eggs into a bowl and lightly whisk
  4. Add flour, salt and pepper to another bowl
  5. Place breadcrumbs into a bowl
  6. Cut fish fillets into 2cm wide strips
  7. Coat each fish piece in flour, stir
  8. Dip in egg
  9. Then press into breadcrumbs, repeat until all fish pieces have been coated
  10. Line each piece on baking tray
  11. Bake for 5 minutes, turn
  12. Bake for a further 5-10 minutes or until golden and fish has cooked through
  13. Serve with your favourite tartare sauce and salad

Notes

I used Hoki fish for this recipe
