A fantastic recipe to get the kids to eat fish, they will love the crunch of the Panko crumbs. Plus this is an easy weeknight meal. I used Hoki fish, however you can use whatever white fish fillet is on special when purchasing.


Ingredients
Method
- Preaheat oven to 180C
- Line baking tray with baking paper
- Place eggs into a bowl and lightly whisk
- Add flour, salt and pepper to another bowl
- Place breadcrumbs into a bowl
- Cut fish fillets into 2cm wide strips
- Coat each fish piece in flour, stir
- Dip in egg
- Then press into breadcrumbs, repeat until all fish pieces have been coated
- Line each piece on baking tray
- Bake for 5 minutes, turn
- Bake for a further 5-10 minutes or until golden and fish has cooked through
- Serve with your favourite tartare sauce and salad
