A crowd pleasing Bacon Pasta Bake recipe that is reasonably light weight, quick to prepare, and easy to embellish with different meats or vegetables – plus the leftovers taste delicious too!
Pasta bakes are a creature comfort of mine. The combination of yummy pasta, tasty tomato sauce, and golden cheese equals perfection! This Bacon Pasta Bake recipe is a relatively light pasta bake compared to the pasta bakes I usually make which have loads of mince. It’s also a great meal for busy families as it can be prepared in just 10 minutes! Cooking time is a little longer though.

To save myself time I use macaroni as it’s so quick to cook. While the macaroni is cooking I brown the onion and bacon, then add the tomato and paste to create a sauce.

Then all I need to do is stir the sauce through the cooked pasta, spoon into a casserole dish, sprinkle with cheese and put in the oven.

Possibly the make or break of a good pasta bake is the cheese. I like mine especially golden, so make sure you don’t take your bake out prematurely.

- Preheat oven to 180°C, fan forced.
- Cook pasta following packing instructions. Drain.
- While pasta is cooking, heat oil in frypan over high heat. Add bacon, onion and garlic stirring for 5 minutes or until onion is almost soft and bacon golden.
- Add tomatoes and tomato paste, stir through and bring to the boil, reduce heat, continue stirring for 3-5 minutes or until the sauce thickens.
- Once the pasta has cooked toss together the pasta and sauce.
- Spoon into a casserole dish, sprinkle cheese over the top.
- Cook in oven for 20-25 minutes or until cheese has melted.

Can you freeze this? Am looking at what meals to cook and freeze for when bub comes along.
I have frozen many pasta dishes with no problems at all. I would only freeze for up to 2 months.
