I met with a friend for lunch at a local cafe recently and must say I had the most deliciously light lunch… avocado and feta smash with smoked salmon. It was so good, so much so I couldn’t stop thinking about it, I saw some smoked salmon when at the grocery store recently, my mouth watered so I picked some up to make my own avocado and feta toastie at home. A fancy lunch for one to have while the kids are at school!
To serve one person with 2 slices of bread mash half an avocado along with 25g feta. Season with salt and pepper, place on toasted buttered bread and top with smoked salmon, if desired.

Avocado and feta on toast
- Total Time: 10 mins
Ingredients
- 1/2 avocado
- 25g feta
- 2 sliced bread, toasted
- salt and pepper, to season
- 2–4 sliced smoked salmon, if desired
Instructions
- Place avocado and feta into a bowl and mash with a fork, season with salt and pepper. (if not using straight away add a dash of lemon juice to prevent it from browning)
- Butter toasted bread.
- Spoon avocado mix evenly amongst bread slices.
- Top with smoked salmon.
