These Apricot Coconut and Muesli Balls are a great healthy lunch box snack, which are easy and quick to make.

These Apricot Coconut and Museli Balls are delicious! I’ve been making a few bite sized balls lately for the kids lunch boxes, they are a great healthy snack.  Looking through the pantry I had some muesli that I wanted to use up which added a nice little crunch to these balls.

I used apricots, but you could replace these with dried apples or dates, this recipe is so versatile.

Apricot Coconut and Muesli Balls

Ingredients

Scale
  • 2 cups toasted muesli (nut free)
  • 1 cup dried apricots
  • 1/4 cup honey
  • 60g butter, melted
  • 1/2 cup desiccated coconut

Instructions

  1. Place muesli, apricots, honey and warm, melted butter in a food processor.
  2. Process on high speed for several minutes until mixture sticks together like paste.
  3. Roll into bite sized balls.
  4. Roll in coconut.
  5. Store in airtight container in fridge to set for 4 hours.
