This is one of those recipes that feels right in any home. It’s easy to make, easy to adjust, and works just as well for a quiet dinner as it does for a table full of snacks. I come back to this easy homemade guacamole recipe often because it uses simple ingredients and always tastes fresh.

It’s a great base recipe that you can keep plain or add a few extras depending on who you’re feeding and what you feel like on the day. Nothing fancy, just good food that’s easy to share.

Helpful Tips

  • Use ripe avocados. They should give slightly when pressed, not feel hard or mushy.
  • Dice everything finely. So it mixes through the avocado evenly and is easier to scoop.
  • Add lime last and taste. Fresh lime makes a big difference to the flavour compared to bottled lime juice, and every lime is a little different, so it’s best to adjust slowly.
  • Remove tomato seeds. To help stop the guacamole from becoming sloppy and keeps the texture fresh and thick.
  • Onion choice
    Red or brown onion both work well in this recipe. I usually use red onion for a slightly sweeter flavour and a bit of colour, but whatever you have on hand is perfect.
MAKING AHEAD TIP
To help stop the guacamole from browning, press cling wrap directly onto the surface before refrigerating. This keeps the air out and helps it stay fresh for longer.

Easy Variations

You can keep this recipe simple or change it slightly depending on who you’re feeding.

Add coriander
A small handful of finely chopped coriander adds a fresh flavour if you enjoy it.

Add jalapeños or Tabasco
Finely chop 1 teaspoon of jarred jalapeños and stir through for gentle heat. If you don’t have jalapeños, add a few drops of Tabasco instead. Taste and adjust slowly.

Make it extra creamy
Stir through a spoonful of sour cream or Greek yoghurt.

Skip the tomato
If you prefer a smoother guacamole, you can leave the tomato out and keep it avocado, lime, and onion focused.

Ingredients
  

  • 3 ripe avocados
  • ½ onion very finely diced
  • 2 tomatoes deseeded and diced
  • 2 garlic cloves minced
  • 1 lime juiced
  • ½ tsp salt

Method
 

  1. Cut the 3 ripe avocados in half, remove the seed, and scoop the flesh into a mixing bowl.
  2. Mash the avocado with a fork or potato masher. You can make it as chunky or as smooth as you like. I like mine with a little texture so it still feels rustic.
  3. Add ½ onion, 2 tomatoes, 2 garlic cloves, 1 lime, and ½ tsp salt.
  4. Stir until everything is well combined.
  5. Taste and adjust if needed. Add a little more salt or lime juice if it feels flat.
  6. Cover and refrigerate until ready to serve, or serve straight away with corn chips, tacos, or nachos.
