A nice light and fresh dip that the kids will enjoy and great for entertaining too!!

My kids are loving the sliced up carrot and celery sticks I’ve been adding into their lunchboxes.  But…. like most kids, it’s too healthy on it’s own and they like to have a dip, peanut butter or cream cheese to smother onto it.  They have been enjoying this beetroot dip.

Servings: 2 cups
Course: Snack
Cuisine: Australian

Ingredients
  

  • 450 g tin beetroot
  • 80 ml extra virgin olive oil
  • 2 cloves garlic crushed
  • 225 g Greek yoghurt

Method
 

  1. Blitz all ingredients in a processor until just combined, do not over mix.
  2. Serve with crackers or vegetable sticks.
  3. Store in the fridge.

Hi Katrina, my four year old has suddenly decided to like beetroot so I will make this over the weekend. How long do you think it would store for in the fridge?

Tracey, as this recipe is yoghurt based I would recommend only storing for 2 – 3 days.
