Almond and Pumpkin Seed Bliss Balls

An incredibly quick and nutritious bliss balls recipe that’s packed with antioxidants, magnesium and fibre. They’re so quick and easy to make, even the kids can do it (these were made by my 14 year old daughter!).

My 14 year old stumbled upon this delicious recipe by mixing together a few things she found in the pantry, and the whole family was blown away with just how yummy these bliss balls turned out!

Although these bliss balls can be stored for up to a week in the fridge, they certainly didn’t last that long in my house.

Almond and Pumpkin Seed Bliss Balls Recipe

The pumpkin seeds in this recipe mean these bliss balls are packed fulled of valuable nutrients, are high in antioxidants, very high in magnesium, and high in fibre too! Unlike many bliss balls which are soft and smooth, these almond and pumpkin seed bliss balls have a morish crunch.

Ingredients
  

  • 24 medjool dates seeds removed
  • 250 g almonds
  • 6 tablespoons desiccated coconut
  • 1/2 cup pumpkin seeds
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup

Method
 

  1. Add all ingredients into a food processor, process on full speed for 30-40 seconds or until nuts have chopped and mixture combines together (this may take a little while, keep blending until it happens).
  2. Roll the mixture into small bite-sized balls.
  3. Store in the fridge for up to 1 week.

Hi
I have a few comments to make about this recipe:
1. It was expensive to make!
2. The mejool dates at my supermarket were huge, and they cost $10
3. Are you sure it is 1 tbs vanilla extract? It seems quite a lot, I used 1 Tsp
4. There was a strong maple syrup flavour in the finished balls, not sure how to keep the moisture and lower the syrup content
5. This recipe made HEAPS, I’m used to bliss ball recipes making half this amount

Hi Melissa, most bliss ball recipes are expensive as the Medjool dates and nuts do cost a bit, but you tend to find this whe you make your own healthy snacks, least you can control the sugar content. You could have the amount, as you say it does make alot. This feeds our family of 5 for snacks for a week. you could reduce the maple syrup and vanilla, I don’t think it will effect the moisture at all as the dates have quite a bit of moisture in themselves. For the pumpkin seed, do i need to roast it first? Or just leave it raw?

The pumpkin seeds don’t need to be roasted in this recipe – although you can roast them if you prefer ๐Ÿ™‚
