I like to periodically share a vegetarian meal plan for any plant based readers. One of my daughters prefers to eat a vegetarian diet so I’m always on the lookout for veggie meals that I can add to our repertoire, that will appeal to all members of the family. I hope you find some plant based inspiration for your meals this week below.

MONDAY
Vegetarian Paella– This is an easy Spanish inspired dish that is loaded with tasty and healthy veggies. Add a squeeze of fresh lemon juice when you serve it.
TUESDAY
Roast Pumpkin Soup – Roasting your pumpkin for soup really boasts the flavour factor. My recipe is easy to make and so tasty.
WEDNESDAY
Kale and Spinach Spanakopita – Kale has been included for a nutrition boost in this recipe for a traditional vegetarian Greek pie. You just can’t go wrong with the combination of filo pastry, cheese and spinach!!
THURSDAY
Falafel & Middle Eastern Roast Veggies – Hearty spinach falafels are the stars of this Middle Eastern feast, with zingy pickled onions to brighten the flavours and roasted veggies for all the good stuff!
FRIDAY
Hash Brown Egg Cups– These egg cups have been described as a good breakfast recipe. However I think they would be so yummy for dinner with a salad on the side.
SATURDAY
Creamy Avocado Spaghetti– This is one of my favourite dinner recipes for nights when I’m a bit strapped for time – this meal can literally be thrown together in less than 20 minutes! I top it with bacon for the meat eaters in the family, but vegetarian daughter just tops it with some parmesan and chopped parsely.
SUNDAY
Delish Lentil Salad – This recipe gives you all the tips and tricks to make a flavour packed delicious lentil salad with a zesty lemon dressing.
BAKING
Banana Chocolate Energy Balls – This energy balls recipe makes delicious and healthy snacks. They are soft,and nut-free, and are perfect for school lunches or snacking.
