Struggling to put a different meal on the table every night? Have a look at some of my meals for this week and hopefully you’ll find a few recipes on here that your family will enjoy.
MONDAY
Smoky Chipotle Mex Pumpkin Soup – Combine the delish taste of Mexican with the all-time favourite soup – pumpkin.
tuesday
Rosemary Garlic Grilled Lamb Chops and Salad – I love these lamb chops served with salad or veggies.
wednesday
Slow Cooker Asian Chicken Salad – This is a great salad that is filling enough fo lunch or dinner.
saturday
Chicken Saltimbocca with steamed vegetables – A lovely meal to make the family when you have a little more time up your sleeve, compared to the hectic busy weeknights.
sunday
Chicken and Vegetable Rissole Burgers – I often make a double batch of rissoles to have some in the freezer for nights when I don’t feel like cooking, I grab them out of the freezer and hubby cooks them up on the BBQ. Simply add to some bread rolls with salad.
baking
Pumpkin Scones – I make these, allow them to cool, slice open, butter, add a little honey, close back up and then freeze. Put them into the kids’ lunchboxes frozen and they are defrosted by lunch time.

I love corned beef, one of my favourite dinners!! Thank you so much Emma for sharing your meal plan 🙂
This week I’m trying to get into the groove of ‘winter food’, especially now that our days aren’t getting any warmer than 15. I try to look for discounted meat when I do my weekly shop the freeze it and include it in future meal plans. I also check catalogs online since we choose not to receive junk mail. This week we’ll be eating
Chicken Parmigiana (on sale last week)
Porcupine Meatballs (mince is on sale)
Lamb Korma
Shepherds Pie
Homemade burgers.
My husbands shops and cooks on weekends
That’s a good idea to freeze the discounted meal to save money. Mmm, shepherd’s pie is a great meal in the colder seasons, one of my favourite meals. Thanks for sharing your meal plan Kylie! 🙂
This week in our house we are having:
Saturday: Butter chicken
Sunday: Corned beef, mash, veggies and mustard white sauce
Monday: Home made chickpea burgers
Tuesday: Chicken skewers, corn, kale stir fry
Wednesday: Slow cooker lamb shanks
Thursday: Pork sausages, potato, baby spinach and mushrooms
Friday: Tuna pasta bake
Any left over corned beef will find its way into sandwiches!
Yummmbo, sounds like you had a good week food-wise! That kale stir-fry sounds interesting, I would love to give it a try. Thanks for sharing your meal plan, Amy 🙂
