Thank you to our valued community for their suggestions on how they Meal Plan.  The lovely Erin, a mum of 3 who has footy on weekends for her hubby, hockey training on a Wednesdays, Footy training on Thursdays and Swimming lessons on Fridays, while working part time says she feels lost if she doesn’t do her meal planning for the week. Thank you Erin for sharing your ideas for the week.

MONDAY

TUESDAY

Honey, Soy & Garlic Chicken Sausage Rolls –  Hubby is away so again something easy & pack some for the kids lunch boxes the next day

WEDNESDAY

Chicken and Roast Pumpkin Pasta Bake –  My eldest has hockey training on Wed’s so I make this during the day and then reheat when we get home. Perfect!

THURSDAY

Thick & Creamy Pumpkin Soup – with some buttered crusty loaf.  My son has footy training Thursday nights so again I will make this during the day & reheat when we get home, yum!

FRIDAY

Steakette works burgers – with potato gems (Hubby picked up some yummy steakettes at a country butcher the other week when they were there for footy so I just froze the other half. All 3 kids have swimming Friday afternoons so this is perfect & easy.

SATURDAY

Sweet and Sticky BBQ Salmon – A delicious piece of Salmon on the BBQ is perfect for a weekend treat with some leafy greens.

SUNDAY

BAKING

Mango Macadamia muffins  These Mango Macadamia Muffins are super delicious and moist with a delightful crunch of macadamia. Bonus is that they are freezer friendly so you can bake up a batch and pop them into the freezer to conveniently have on hand for an after school snack, pop them on the bench that morning so they are defrosted by the afternoon.

Wow, I feel exhausted at all that running about the place. All I do is go to work and come home, albeit some 10-11 hours after I left home that morning. It still ends up being a challenge with the getting dinner on table issue!

This morning I posted about the version of tired that is end-of-term-teacher-tired. There is no other tired like it, except maybe newborn-not-sleeping-mum-tired. My menu plus is thus:
Monday: quick quiche, veggies (someone? anyone?)
Tuesday: oven fried chicken, veggies (Miss Mischief could handle this one)
Wednesday: minestrone & bread rolls (I’m home and finished study, so this one is mine)
Thursday: tuna and rice (Miss Sunshine will be the hero of the dinner table)
Friday: fend for yourself Friday
Saturday: mushroom risotto (I use any recipe that looks good, but I dump in all the liquid at once and put the lid on, after that sautéing of the rice step – it’s lazy, but it works)
Sunday: sweet & sour chicken meatballs (I make mini chicken meatballs using my wonton recipe, and then do a ton of stir fried veggies with a sweet and sour sauce (p190) from my iconic “Cookery the Australian Way” book.
