As the weather warms up, we can slowly move away from the winter casseroles. These are my family favourites for the week. I try to mix things up and have a bit of every thing. As you may notice I have some chicken, beef, fish and vegetarian meal ideas here. I am a big believer in eating with your eyes and I like to keep my meals bright and colourful wherever I can.
Hello!! My name is Sam and I have recently had the privilege in joining Kat at the office as her Assistant. I have known Kat for many years and have always looked up and admired her. I have been following Kat’s posts forever and love all her tips and planning but most importantly her honesty, fun, loving vision of what her Blog is and how she intends to continue to help the community. My family have always referred to me as the ‘Organised’ one and I tend to be the one to organise most get togethers and events throughout our family and extended families. I am married with two beautiful boys (9 & 13). We live on the Gold Coast and enjoy weekends around home or venturing out to the local oval to kick the ball and run around with our Labrador.

Each week I am going to share one meal planning/grocery budget tip to help you through this process.
Keep your meal plan visible for all to see – there are quite a few benefits to this:
- So you can easily glance the night or morning before, which can help remind you if you need to get something out of the freezer or pop on the slow cooker.
- This may stop the kids continually asking what’s for dinner.
- If other members of the household can read what’s for dinner, then they have no excuse to not help cook dinner.

MONDAY
Chicken Burritos – In our household we love burritos and taco’s and the kids love being able to make their own. We cut everything up onto a platter and put it in the middle of the table.

Roast Vegetable Quiche – A Quiche can be made with many different ingredients to suit your families tastes. The ingredients in this recipe remind me of a healthy version of a Mediterranean Pizza.

Coconut Chicken Curry – My family have always loved curries. My Nana and Dad have always made the most delicious curries from scratch. Lucky for me we have a variety of sauces in the store but nothing beats a Homemade curry with all the original herbs and spices.

Mini Beef Burgers – Another family favourite as we like to cut all the ingredients up and place in the middle of the table so we can make our own.

Homemade Fish & Chips – After a long week of work and school, its always nice to plan something quick and easy for dinner. There are plenty of Fish and Chip shops near us, but if we can I like to make our own. Even if its a piece of frozen fish from the freezer.

Steak with onion gravy – Over the weekend and especially now the weather is warming up we often like to have a BBQ and cook some steak for dinner.

Salmon Nicoise – This salad looks delicious and I can’t wait to try it. On a Sunday we often have dinner a little earlier as we wind-down from the weekend and prepare for a new week.

Berry Tortilla Tart – Strawberries have been so cheap lately that I can’t go past this Berry Tart. The kids will love helping with this recipe as they love these fruits and they who could go past some double dullop cream with berries.. yum!
