MONDAY
Beef Stir-Fry – taking just 10 minutes to prep and 10 minutes to cook, this tasty meal is perfect for those busy nights. Not only is this stir-fry quick and easy to make, it’s pretty healthy too!

TUESDAY
Chicken Noodle Soup – I had some of this in the freezer so was able to simply heat and eat! This is a great meal to freeze and have on hand if anyone in the house is unwell. It’s packed with protein, veggies, and goes down a treat with adults and kids alike.

WEDNESDAY
Roast Chicken and Vegetables – how good are crunchy baked potatoes?! This yummy meal is a great way to push through that mid-week hump, and if you’re wanting a shortcut, simply pick yourself up a roast chicken from the deli.

THURSDAY
Broccoli and Basil Soup – the kids are back at school and so I thought it was the perfect time for a good immune boosting meal like this one – to counteract all those extra germs that are being brought home – lol! I always make extra of this soup too, so that we have some in the freezer ready to go when needed.

FRIDAY
Chicken Pumpkin Tortilla Bake – you probably all know by now that my family love Mexican and bakes, so combining the two together creates the ultimate meal in my house. This bake is warm, comforting, and full of flavour!

SATURDAY
Chicken Meatballs and Pasta – These meatballs are pretty healthy and taste delicious served over pasta. I love to make them on a Saturday night when I can have the TV on in the background whilst I am rolling out the meatballs.

SUNDAY
Tuna Mornay – my mum used to make Tuna Mornay for us all the time as children, and it’s one of my all time favourites! The perfect way to end the week in my opinion.

BAKING
Cinnamon Crumb Muffins – these muffins are super yummy and quick to make! My advice would just be to spend a little bit of time running the crumb through your fingers so you get an even crumb coating.
