When life is busy – and for most mums this is every week! – meal planning can do wonders. I am a big believer in creating a weekly meal plan because it helps give my weeks a little structure, and in turn it makes them run so much smoother! MONDAY
Teriyaki Grilled Salmon and Veggies – I love serving salmon for dinner, and I like this recipe because the teriyaki adds an interesting touch. I served my grilled salmon with steamed vegetables, but it would work really well with rice too.

TUESDAY
Slow Cooker Moroccan Lamb or Beef Curry – I like to use my slow cooker on a Tuesday tonight because my daughter has netball training. I popped this on in the morning, and it was just perfect come night fall. I love this Moroccan Curry – it’s quick and tasty, and is packed with veggies and chickpeas.

WEDNESDAY
Pork Chops with Veggies – a simple meal that ticks all the boxes in my home! We had our grilled pork chops with mashed potato and steamed vegetables.

THURSDAY
Eggs on Toast – never discredit this option for a quick dinner idea. Eggs on toast make a regular appearance at the dinner table in my house.
FRIDAY
Beef Tacos – my family eats tacos a lot! They are so simple to make and easy to change-up by using different fillings or taco shells. I always make a big batch of the mince so there’s left over to put in the freezer, otherwise we have it on toast the next day.

Dinner Out At Friends – because we all need a break from cooking sometimes!

SUNDAY
Chicken Kebabs, Potato Bake and Salad – A truely yummy comfort meal for a cold Sunday night at home with the family. I can hands down say that my potato bake recipe is the most deliciously creamy potato bake I have ever had – an absolute winter dinner table essential!

BAKING
Cheese and Bacon Mini Quiches – I like to always have a batch of these quiches in my freezer – they’re great for lunch box treats and after school snacks. I make a few batches at once because generally a substantial portion of them don’t even make it to the freezer – ha!
