This week’s meal plan has some delicious recipes the whole family will love! Start the week with Speedy Falafel and Black Rice Tabouli Bowl, Slow Cooked Mongolian Beef, Cheats Enchilada Bake and more!

BENEFITS OF MEAL PLANNING

Each week I plan my meals for the following week, this is called meal or menu planning. Some think it’s not worth it, but it really is a simple task that takes 5-10 minutes to plan one week of meals. The money and time that these five minutes save me throughout my week, makes it well worth the effort.

MONDAY

Speedy Falafel and Black Rice Tabouli Bowl – An easy and delicious meat free tabouli bowl to start the week off. 

TUESDAY

Slow Cooked Mongolian Beef – This slow cooked recipe is quick to prepare first thing in the morning, throw into the slow cooker and will ready in the evening to enjoy! 

WEDNESDAY

Roast Pumpkin with Lentils, Tahini and Za’atar – A great main meal or add some meat protein and have this dish as a side. 

THURSDAY

Bacon, Leek and Corn Risotto – A light risotto recipe that’s delicious, quick, and super easy to make!

FRIDAY

Cheat’s Enchilada Bake – This Mexican bake is loaded with layers of smoky chipotle chicken and beans, tortillas, sour cream and cheese – YUM!

SATURDAY

Fried Halloumi Salad – This salad is a great way to enjoy the flavours of the Halloumi cheese. 

SUNDAY 

Lamb Chops with Garlic Parmesan Zucchini and Tomato Bake – Serve this delicious meal alongside meat and fries to make it go further. 

BAKING 

Hummingbird Cake with Cream Cheese Icing – This delicious Hummingbird Cake recipe with cream cheese icing will have the family coming back for seconds!
