MONDAY
Gnocchi Bake – a gnocchi bake is such an easy to-make dinner idea, and it can be made many different ways! Add salami, chorizo, chicken, pumpkin, or whatever you’re in the mood for. I love to add extra veggies that need using up. A quick and tasty meal idea perfect for a busy Monday.
TUESDAY
Southwest Chicken Tortillas – These baked tortillas smell amazing and taste even better. Packed full of yummy ingredients, chicken, cheese, beans, corn, capsicum and more! I’m going to serve mine with some guacomole and fresh salsa.
WEDNESDAY
Grilled Salmon and Roast Veggies – this is a healthy and really quick dinner to throw together. I got it on the table in under half an hour, and everyone really enjoyed it!
THURSDAY
Minestrone Soup – a classic vegetarian soup recipe full of hearty vegetables in a tomato and herb broth. This goes perfectly with a nice crusty sourdough bread loaf.
FRIDAY
Mince and Vegetable Potato Pie – this potato pie is a family favourite in my house – especially during the cooler months! It’s also packed with heaps of hidden veggies, so it’s a good way to sneak in some extra nutrition.
SATURDAY
Left Overs –It’s nice to have night off cooking every now and again, and the easiest way to achieve that is with a night of leftovers. A few of these dishes on this week’s meal plan always makes more than we need for one dinner, so that will make for an easy night tonight!
SUNDAY
Pork Fried Rice – Fried rice has to be one of those family meals that ticks all the boxes – healthy, quick to make, able to include heaps of veggies and a meal that the majority of people like. The recipe below uses BBQ pork, but you could make it with beef, chicken or a vegetarian option.
BAKING
Chocolate Chip Cornflake Cookies – this recipe makes 30 cookies so it’s a great if you want some extra to pop in the freezer, if they last that long!
